Head Start classroom students are participating in a snack study funded by the Ann Atherton Hertzler Early Career Professorship in Nutrition Endowment Fund and the Clinical Translation Sciences Program. The purpose of this study is to assess the relative reinforcing value of food (RRV) in low-income preschool aged children enrolled in Head Start. RRV is an objective measure of how hard an individual is willing to work to obtain food and is a strong predictor of food intake. Food deprivation and hunger may increase the RRV of food, thus we are specifically interested in whether differences in RRV exist by food security status (food secure versus food insecure). This project will help improve future nutrition education programming for Head Start preschoolers.
