Professional Experience

Dr. Ruth Pobee is a Senior Research Scientist in Emergency Medicine at the University of Illinois, Chicago. With a decade of experience as a research scientist, her current work focuses on health disparities in hypertension, diabetes, and cardiac arrest. Previously, she conducted research on maternal and child nutrition, micronutrient deficiencies, psychosocial health, food security, and food fortification in countries such as Uganda, Ghana, Rwanda, and the United States.

In addition to her professional role, Dr. Pobee is actively involved in volunteer activities and is dedicated to helping young individuals from minoritized backgrounds pursue higher education and achieve their full potential. She volunteers with a Third Culture group in her community, mentoring African American middle and high school students on various career opportunities.

Dr. Pobee received her BSc in Nutrition and Food Science and Master of Philosophy  in Nutrition from the University of Ghana and a Ph.D. in Nutritional Sciences from Penn State. During her time at Penn State, she co-founded and served as treasurer for the Pan African Professional Alliance (PAN-APA), an organization that continues to thrive. Her involvement with PAN-APA deepened her understanding of the importance of diversity at Penn State.

Dr. Pobee aims to leverage her knowledge and extensive experience to support students at Penn State by providing mentorship and engaging in activities and programs that foster diversity and inclusion.
