Potato Study

Purpose:

This is a nutritional study that examines the effect of potatoes on health outcomes related to cardiovascular disease and diabetes.

Procedures and Compensation:

  • We will provide you with potato and grain based side dishes for incorporation into your usual diet.
  • Two-four week treatment periods with a minimum 2 week break between the test periods.
  • Measurements of blood pressure, vascular health, and blood markers (glucose, insulin, cholesterol) at the start of the study and the end of each treatment period.
  • $300 compensation.
  • Lab results provided at no cost.

You may qualify if you meet the following criteria:

  • 25-75 years old
  • BMI 20-40kg/m2
  • Non-smoker
  • Not taking cholesterol or blood pressure lowering medication
  • Free of cardiovascular disease, stroke, kidney or blood vessel disease
  • Live in State College, PA or the surrounding areas (please note this study requires regular appointments at Penn State, University Park).
