The Nutrition and Microbiome—Singh Lab's current studies focus on identifying the risks and benefits of long-term consumption of processed dietary fibers. 

Deceptive health claims on packaged foods and supplements are one of the biggest concerns of the food industry. For example, processed foods fortified with isolated dietary fiber are generally promoted as beneficial to everyone, however, scientific findings differ with this claim.

Whole foods rich in natural fibers offer a wide range of health benefits. As a recent addition to our foods, the effects of ultra-processed dietary fibers on overall health, particularly with long-term continuous use, are still being studied. Identifying the risks and benefits of long-term processed fiber consumption will empower people to make informed choices about fiber supplements and processed foods.
